SPICY ROASTED CHICKPEAS
Ingredients
1 15 oz. can of chickpeas (garbanzo beans)1 tablespoon olive oil1/2 teaspoon sea salt2 teaspoons of spice mixture (a curry, Morrocan, or Mexican spice mixture work well)
Directions
Make sure the chickpeas are completely dry after draining and rinsing them. Otherwise they’ll end up chewy and soggy.
Preheat oven to 400°F.
Drain and rinse chickpeas in a colander. Pat dry.
Toss chickpeas in a medium sized bowl with olive oil, sea salt, and spices.
Arrange chickpeas on a baking sheet in a single layer.
Bake for approximately 30 minutes or until crispy. While baking, shake pan or stir chickpeas to avoid burning.
Transfer to a serving bowl.
If desired, sprinkle and toss with more spices.

So far today/new way of eating

I have been perfect! Breakfast was 1 egg with salsa and coffee,lunch was 2 stalks of celery,2 eggs(egg salad) on lettuce,1 oz fresh mozzarella and 1/2 a cucumber.My snack will be a string cheese and 10 almonds and dinner is in the oven(pot roast and green beans) also did 20 mins of cardio this morning and im gunna do my bob harper 25 min dvd later on tonight.For those who are wondering why im not having fruit, well im following a low carb lifestyle recommend to me by my doctor because i might have a slight sucrose/fructose intolerance so he suggested i try a low carb (healthy fat) diet. and sure enough it works i loose weight, i have more energy and my horrible acne clears up!So i eat tons of veggies,cheese,eggs,3 oz of lean meat a few times a week,nuts and nut butter.I take a multivitamin,fish oil and a 1,000 mg vitamin c daily and so far so good. I will def keep you posted on the different changes i notice.
